Easy Mexican/Spanish Rice

Tonight we are having enchiladas…leftover pulled pork and leftover tri-tip. That’s for another blog.  I started off by sauteing 1/4 onion , in 2 Tbl. of oil , adding 1.5 cups of rice a couple of minutes later. I then sautéed the rice and onions for 5 minutes.  Adding to this about 3 cups of water mixed with 1 tsp each of Caldo de Tomate and Caldo de Pollo and 3 tbls. of  medium salsa. Bring to boil and reducing to simmer for 20 minutes.

EASY!!!
